Candy Corn Sugar Cookies

Happy Sunday all! I'm here with another baking recipe for ya. I came across a picture of these cookies on Pinterest (shocker!) and knew I had to make them. They are perfect for Halloween - candy corn sugar cookies. I have to say, these are by far, the cutest cookies I've ever seen! I love candy corn and it just makes me smile to see a candy corn cookie.  =)

See, cute! I bet you're smiling now too. Now I will admit these cookies were a bit labor intensive. You see I don't have a Kitchen Aid mixer or any stand-up mixer for that matter. Which meant I had to mix in the coloring by hand. I thought my shoulder was going to need ice yesterday afternoon. For reals! My right shoulder was aching while I stirred in the yellow and then the red food coloring. If you have a mixer these will be so easy for you to make. Here's a look at the process.

After my dough was made I divided it into thirds. The first third I left white and put into a plastic wrap lined loaf pan. See picture above. I patted it as flat as I could. Then I mixed the yellow dye into the remaining two thirds and added half of the yellow to the pan. The last of the yellow dough got some red coloring mixed in to turn it orange. Oh, by this point I was ready to quite! It seemed like it took forever to get that dough orange enough. But I suffered through and the middle pic above is what the dough looked like all flattened together.

I let it chill in the fridge for about 6 or 7 hours. You could let it chill overnight if you wanted. I would recommend chilling it at least 4 hours. You want it to be nice and firm once you start slicing. Make your slices about 1/4". Then just angle your knife to cut out candy corn shapes. See picture above. That's all there is to it. Like I said, if you have a mixer this will be super easy.

Here's the best recipe I've found for sugar cookies. It's from All Recipes and makes soft and chewy cookies or you could bake them a couple minutes longer if you like yours crispier. 

Ingredients
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Directions

1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.

   3.  Bake 6 to 8 minutes in preheated oven. Cool completely.

** FYI - I only made half a recipe. I got probably 100 or more candy corn cookies out of it. 

This morning while taking pictures of these little cuties, I thought you could easily use different colors in the dough and round out the pointy parts to make more of an egg shape for Easter cookies. I will definitely be doing that. Wouldn't they look great with pink, yellow and white? Or purple, white and blue? Or, you could color every dough third a different color and have green, yellow and pink eggs. Oh the possibilities are endless. Just try these for now.  : )

Happy Halloween weekend!! 

Hope you're all have a good one. Any partyin' going on?   

I realized last night that I hadn't showed you the Halloween 

decorations I'd put up the first weekend of October. I 

don't do a lot of decorating. I shared the Halloween 

wreath I made for our front door here. 

Other than that, I hang pumpkin lights in the front window

and our entryway gets a little decorated.

100!!

Happy Saturday all. For me it really is a happy Saturday. I woke up this morning to a shiny, round, three digit number in the sidebar of my little blog. That number said 100!!! Thank you to each and every one of you for coming back. It really makes me smile to read a lovely comment from you. And I know there are a bazillion blogs out there, thank you for choosing to read mine!!! You truly have made my day!

I have been thinking of doing a giveaway once I reached 100. I wish I could just run out and buy a lovely gift and ship it off to each of you, but times are a little tight right now and may be getting tighter, so I'm trying to think up something crafty. A Birthday in the House!

Today is a very special day in our house, Miss E is turning 13!! Yep, we officially have a teenager in the house. I can't believe how fast the years have flown by. When I first moved in with Mr. CC she was a mere 20 months old. I'm fortunate to have had a hand in helping raise her and I couldn't be prouder! Miss E is the best big sister and such a sweet, creative, funny and loving girl. 13 today, and before we know it she'll be 18 and going off to University. We love you soo much Miss E!! Happy Birthday sweetie!!  : )

2 Years Ago Today...

Mr. CC and I have been together for over 11 years.  : )  But it was only two years ago that we finally made our love legal , in a sense. We'd lived together all those years. Even had Miss A in that time, and things were just fine that way, but my being American living in Canada, it was in our best interest to make it legal.  For me marriage isn't a piece of paper, it's the mutual respect, understanding, and love you have for another person. Sure we've had a few bad days. Who hasn't?

From day to day our love continues to grow - strengthen. I am more in love today than I was back in those "new love" days. You know what I'm talking about. Those days when you hardly eat and never feel hungry. When just hearing his voice makes you all bubbly inside. Now it's a deeper love. And we continue to grow together. He is my best friend and I can talk to him about anything. We laugh everyday, which to me is a very important thing in a relationship.

The best gift he has ever given me was two beautiful daughters. I love them more than anything. They are soo precious and bring soo much joy to our lives! I look forward to seeing them grow and become strong , self-assured women.

So with that I say, Happy Anniversary Baby!! I love you with all my heart! Here's to many, many more years together.  : )

Although I am American I won't be partaking in any celebrations today.  : (  That means no BBQ, apple pie or fireworks for me. In Canada July 1st, Canada Day, is their country's "Independence Day". I'm wishing you all a fabulous day spent with loved ones, great food and fantastic fireworks!

Smores on a Stick!!

Happy long weekend all!! I have a tasty little summertime treat to share with you today - smores on a stick. This is a great one to make if you don't have access to a campfire or it's too windy for a fire, like it is here. And it's oh soo easy! First grab your ingredients; bag of marshmallows, graham crackers, chocolate and some sort of stick. I cut kabob sticks in thirds. You all know how I love to use kabob sticks. If you don't check this out.  : )

As you can see in the picture I crushed up some graham crackers, about three. I kept some bigger pieces so it actually tasted more like a smore than pie crust. Know what I mean? And I melted the chocolate in a bowl in the microwave. Now I would suggest doing this on a low power level for a short amount of time and watch it. I had it on a low power level, but apparently is was too much time. It burned! And I mean smoke bellowing out of the microwave burning. Yep, the whole house reeked!! Mr. CC called it a cooking fail and it was.  : (   So, make sure you watch it!!

I'm sure you get the idea. Put a marshmallow on a stick, coat it with chocolate and then graham cracker. Easy enough, right?

Don't they look yummy? I must say, they were pretty tasty. But they are CRAZY sweet! Ms. A and I could only eat one each. Give these a try at your 4th of July BBQ or anytime this summer. I'll bet the adults love them just as much as the kids!

Happy Birthday Canada!!

Happy July 1st! First off, I can not believe the year is already half over! And Ms. A will be starting kindergarten in exactly two months from today. I'm soo excited for her. We got her school uniforms on Tuesday and I have to say, she looks sooo cute! *tear*  : )  Anyhoo, this post isn't about my baby going off to school. I'm sure there will be a couple about that later in the summer. ; )

This post is about Canada and celebrating its birthday, and a little about me and how I got here. I moved to this beautiful country over 11 years ago. I'm originally from Northern California, born and raised, but living in Las Vegas when I decided to go North. Yep, I moved from hot and sunny Las Vegas to the land of eight months of Winter, three months of Spring and one week month of Summer. : ) I know this sounds crazy to most of you. It still does to me too. But I had a good reason, I had met Mr. CC online and fallen in love! At the time Ms. E was only 20 months old. It was a no-brainer, I had to be the one to move, so I did. And I've been here ever since.

This is a great country, with great people. I have to say its pretty much just like America, except for one major law I will not bring up, but I'm sure my Canadian readers know what I'm talking about. ; ) They have almost all the same stores (soo excited Target will be here in a couple years!) and restaurants. There's only a couple things I really miss from the States and one of them is Red Vines. Yeah, the licorice. I LOVE it and they only have Twizzlers. Not fair! Sorry getting off subject. This is a great place to live. Calgary is a huge city with lots to do. My community has everything I need within walking distance. Really - Safeway, Subway, Shoppers Drug Mart, 7-11, a bakery, a kids consignment shop, a used book store, a great place we order pizza from, an outdoor pool and lots of playgrounds. I love it! The only complaint I have against Canada is the weather. We definitely need more warm days. Other than that I can't complain. Its been a great adoptive home.  : )
