Pop-Tarts
Crust
1 1/2 c flour (plus more for rolling out dough)
1/2 tsp salt
1/4 c butter, cubed and set at room temp.
1/4 c vegetable shortening, cubed
2 tbsp cold water (approx.)
Filling
6 tsp of you favorite jam (I used strawberry.)
Glaze
1 c powdered sugar or icing sugar for my Canadian readers, ; ) (They're the same thing.)
1/2 tsp pure vanilla extract
1 to 2 tbsp milk
sprinkles of your choice
1. Preheat oven to 425. For crust, combine flour and salt in a large bowl. Add butter and shortening. Mix together until dough is crumbly. Add water, 1 tbsp at a time, until mixture forms a ball.
2. Separate dough into 2 equal balls. Toll out each on a lightly floured surface into a 1/8" thick square, then cut out 3" x 5" rectangles. Collect leftover scraps and roll out again to use up all the dough.
3. Place 1 tsp jam on each rectangle. Fold in half like a sandwich. Using fork tines, crimp and seal edges. Repeat with remaining rectangles and jam. Place sealed pastries on a parchment-lined or greased cookie sheet and bake 8 to 10 minutes, or until golden brown.
4. Remove from oven and let cool completely.
5. For glaze, mix powdered sugar and vanilla in a bowl. Whisk in about 1/2 tbsp of milk at a time, until glaze has a thick syrup consistency. Using a spoon, drizzle icing over cooled pastry and spread. Decorate sprinkles while icing is still wet.
That's it, easy peasy. I opted not to use sprinkles and instead tinted some of the glaze pink. I then put it into a zipper baggie, cut off a tiny piece of the corner and made zig-zags across the top of the white glaze. They are soo pretty. Have a look!
